If I ever make anything to eat that is really, really good, something I would serve to company...I need to tell you about it. I made this as soon as I came home from work today, so that Richard would have this wonderful cinnamony apple smell greet him when he walked in the door.
Wait...why did I call this gluten free apple pie a la moon? Because we enjoyed it under a beautiful moon, of course. And you know my Richard took photos for you!

I'll keep this recipe for when we get our glut of apples in the autumn. I'm always looking for new things to do with them.

That is a nice song from Chris De Burgh. I enjoy his music. One of my favourites is 'A Spaceman Came Traveling'. Have you heard it? It's from his album 'Spanish Train and Other Stories'; a terrific collection of songs.

Oh yes, I think I know all of his songs as we are all big fans. And "A Spaceman Came Traveling" is one of my favorites.

Yes, I saw that moon! It illuminated the white flowering cherry tree in our yard---it actually glowed in the moonlight. But I didn't have anything like your delicious apple pie to eat while gazing at it. :-(

And I would think you could make that recipe with wheat flour, I just never have since Richard must be gluten free.

I don't think I've ever tried anything gluten-free, but that pie looks delicious. Those moon photos are simply beautiful.

We love apple crisp (that's what we call it here) so much that I made it for our Christmas Eve dessert. Richard's moon pics are gorgeous! "We are under the same moon, the same sun" is what my soon to be husband used to tell me on the phone before we got married and were living in different cities. This was before email and Skype and messenger, lol!!

Like you, I tend to make this when I have some apples that are "getting on a bit" as my English husband calls them! That is why I put some OJ or pineapple juice with them, since they might be a bit drier than fresh apples.
And thanks for the compliment to Richard for his photos. I am amazed sometimes at how good they are!
Great pictures of the moon Kay G, and I just love that gluten free Apple pie recipe, it has been saved and will be checked out, as I am always looking for gluten free recipes. With temperatures in Scotland right now being what they are, I can't see me eating it under a full moon anytime soon !!

She has the best recipes and EASY to make! She has Garlic Cheese Biscuits and Perfect Poundcake recipes that are to die for! If you look at those recipes and read the comments you will see my name praising her to the skies!
I made it, and it was a real hit! I liked that the crust is spread on, so there is no need to roll it out, as you would with regular pasty. It makes it a quick, easy and very tasty pudding.

Did I mention it was easy? Maybe I didn't but if I ever make anything, it has to be easy! Did you make this with regular wheat flour or did you make it gluten free? I would love to know!
We need rain too, but alas, this weekend it is sunny and mid 70's...we'll just have to make do! :-)
I had to make it with regular flour, because I had none of the gluten-free. However, I would like to try it again, sticking exactly to the recipe, because I like the sound of the almond flour.
