When Life Gives You Lemons...




Whenever I make a cake that comes out the way that I want it to, I take a photo of it!  This is a pound cake that I made for Richard, it is made from rice flour and cornstarch so it is gluten-free.  The batter seemed a bit much for my little loaf pan so I made a small cake in a cake pan. (They call it a cake "tin" in England!) This was really good! The recipe didn't say to do this but I like to poke holes in the cake with a toothpick and then, I mix fresh lemon juice and confectioner's sugar together and pour it over the cake and it soaks into the cake.  Lemon Cake! Don't you love lemon?  I do!

Of course, you know the expression, "When life lives you lemons, make lemonade".  Guess what, I had a sweet teacher who wrote that on a note and gave that to me in high school and...I still have the note! (Just came across it recently.) Thanks, Ms. Ellington! Hope you all had nice teachers in school, I had some bad ones but I hey, I have dismissed THEM from my mind!  

I have been hearing Joe Cocker singing the Beatles song "I Get By With A Little Help From My Friends" on a TV advert.  It sounds so good to hear!
It was used as the theme music for the TV show "The Wonder Years".   Anybody remember that show?  I thought it was great!



Now remember, if life gives you lemons... squeeze them and then, mix with sugar and pour over a cake!  It will be wonderful!

  2. Oh my that pound cake sounds wonderful with the lemon juice and confectioner's sugar poured in the holes. I do love lemon and often make lemonade. It's so refreshing and good for you to too.

    1. Yes! I just use a toothpick and make those tiny holes and then pour over the lemony sweetness! I even like lemon slices in ice water. I used to put lemon in my sweet tea but I am older now, so it is water for me! :-)

  3. I miss Joe Cocker. He had such a distinctive voice and singing style.

    I imagine you're thrilled about the new royal baby!

    1. I really liked his version of that song, really unique.
      And I am tickled about the new royal baby. I like Prince William myself and his lovely wife, I think they're great! Wonder what they will name him? Everyone is saying Albert or Arthur, I think it should be Cosmo. It just came to me.

  5. It looks soooo good. A man I worked with made his rum cake the same way. We loved holiday potluck dinners because he always made one. After lunch we would all be a bit tipsy when we went back to work.

    1. Oh, someone once brought me back a rum cake from the Caribbean when I worked at the travel agency. We always shared our goodies from our customers, but this one time, I loved the rum cake so much, I gave them all a slice but took the rest home with me! :-)

  6. Only yesterday I picked 30 lemons off my little lemon tree...and there is still a lot more fruit on the tree, ripening as each day goes by. It is a wonderful little tree...and it really is only a small tree...every season it produces lots and lots of lemons. I love them...and my little lemon tree.

    And I love the look of your cakes. :)

    1. 30 lemons!!! Oh, you have reminded me. One of my friends told me that since I love lemons so much, I should buy myself a lemon tree. I think I will and I will name it "Lee, the Lemon Tree"! How perfect is that!! LOL!

    3. Guess what, my sweet husband DID get me a lemon tree! I wonder if it will do well in Georgia, my little lemon tree named "Lee"? I hope so! It will have to live in my garage during the winter, or maybe it will come inside to live with us!

    4. I'm honoured! :) Once this crop is finished, I'll prine the tree back a bit....and at the commencement of our spring...September...I'll spread some fertiliser around its base...and that will be that.

      I might give the limbs and leaves a spray with a mixture of water, vegetable oil and dish detergent after I've pruned it because I see there is a bit of mould revisiting it...but I can't spray it with the mixture until I remove the rest of the fruit....but before new blossoms appear.

      I hope you have as much luck with your Lemon tree, Kay, as I have had with this generous little one. :)

    5. Thank you, Lee for your comment here telling me how you care for your lemon tree! I will let you know how it turns out. Richard is VERY good with our plants, he is really talented! Lee, the Lemon Tree is a welcome addition to our living plants! :-)

  9. I love the flavor of lemon...But can't eat any kind of cake anymore, alas! (Your cakes look delicious.) Still, lemon can be enjoyed in many ways. I also enjoyed the wonder years. I should look and see if Netflix has it.

  10. Your cakes look delicious, Kay! Lucky Richard! I've done the same lemon juice/confectioners sugar trick with pound cake. It tastes so good! I also like to glaze a bundt cake with a mixture of brown sugar, butter, and rum. This is torture! I'm slowly removing some pounds and such treats are not for me right now! One day I'll be able to enjoy moderate bits of such treats again! Take care!
